Turkey Taco Meat for Taco Tuesday
About ten years ago, I came across a t-shirt online, and I promptly told my husband that these two things would ensure future happiness: "Feed me tacos and tell me I'm pretty."
I'm a simple girl.
And I still feel that way today, although perhaps I don't need as much reassurance on my looks as I've now passed the midlife line and am on my way back down. But as far as tacos... they remain a favorite. So much so that I could pretty much eat them every day.
Now, I've always used the taco seasoning packets because I thought they were the easiest and quickest way to get those tacos on the table. But we all know that they are filled with less-than-desirable ingredients. And quite frankly, whatever is in there would often hurt my tummy.
I set out to find a made-from-scratch recipe with cleaner ingredients that was simple and not spicy, but full of flavor. I also wanted it to adapt to what we were in the mood for that night. Want tacos? Great. How about nachos? Sounds delicious. I even like making taco salads on nights that we're craving more greens. And don't forget stuffing it in a baked potato. Then top off all your desired fixings with some sour cream, and you've got a real winner for Taco Tuesday or any night's dinner.
Turkey Taco Meat for Taco Tuesday
Serves 41 lb. x-tra lean ground turkey (or lean ground beef)
1/2 tsp. onion powder
1/2 tsp. garlic powder
1 tsp. cumin
1 tsp. paprika
1/2 tsp. salt
1/2 c. beef broth
1/2 tsp. garlic powder
1 tsp. cumin
1 tsp. paprika

1/2 c. beef broth
Brown the ground turkey in a medium skillet over medium-high heat. Once cooked through, drain any fat. Sprinkle on all the seasonings and stir to combine. Pour over broth and stir again. Bring the mixture to a boil. Then turn down to low and let simmer for about five minutes. Serve.
Use in tacos, nachos, salads, potatoes, or whatever else you'd like taco meat in. Top with your favorite ingredients such as diced red onion, shredded cheese, lettuce, sour cream, cilantro, and hot sauce for those of you who like it spicy.
